General Papaya Info

Fully ripe papayas are fragile and not usually found in the market. Unripe papayas are green; select ones that have begun to turn yellow and gives to gentle pressure.

How to Ripen Papaya

Unripe papayas should be kept at room temperature until they are fully ripened; if placed in a paper bag, they will ripen even faster. The ripe papaya should have a sweet aroma.

Short Term Papaya Storage

Store whole ripe papayas in a plastic bag in the refrigerator; they will hold for 1 week.

Papaya Long Term Storage

To freeze, peel the papaya, slice lengthwise and scoop out the seeds. Cut into pieces and pack into rigid containers or heavy duty plastic freezer bags. Cover with a 30 percent sugar solution (4 cups water to 2 cups sugar) and freeze up to 10 months.

The thawed papaya will be soft; for salads, use the fruit with some ice crystals still remaining on it. It will be fine for cooking purposes, although not quite as firm as fresh. You can also pop the thawed fruit into the blender for a puree or add a bit of water for a juice.

Papaya Side Notes

Although the papaya fruit can weigh in up to a whopping twenty pounds, the average papaya in the market is about six inches long and weighs from one to two pounds.
