General Plum Info

Select plums that are plump, not bruised, and yield to gentle hand pressure.

How to Ripen Plum

Place unripe plums in a closed paper bag at room temperature until ripe.

Short Term Plum Storage

Store ripe plums in a paper bag in the refrigerator for 4 to 5 days.

Plum Long Term Storage

To freeze plums, cut in halves or quarters and remove pits. Pack fruit in an airtight container and cover with cold 40% syrup (4 cups water and 3 cups sugar) leaving ½ inch of headspace. For improved quality add ½ teaspoon of ascorbic acid, or 1 teaspoon of bottled lemon juice, to each quart of syrup. Store frozen plums at 0 degrees F for 8 to 12 months.

Plum Side Notes

There are hundreds of varieties of plums in a wide assortment of colors. However, they fall into 2 main groups: Japanese-type plums which are clingstone varieties (pits hard to remove); and European-type plums which are freestone varieties (pits easy to remove).
