What is the best crop to plant after potatoes are dug up?

It depends on what time of year you dig up the potatoes. If it's still earlier in the season you could plant any faster-gorwing summer vegetables like bush beans, summer lettuces or arugula, kohlrabi, carrots, etc.
If it's later in the season you could plant any of the spring / fall crops like broccoli, lettuce, carrots, peas, turnips, spinach, etc.
