When sweet potatos are in potato bin at home and begin to grow stems and leaves can you cutoff the top where these are and plant them to get new sweet potatos?

If you let the stems grow to about 2" then cut the potato so each bit has a stem, then plant the piece so the stem is just under the surface of the soil, keep watered till established. You can eat the leaves like spinach or stir fry them too!
