Is there anything you can do with slightly tough corn.

Yeah you can toughen up and eat it! OK, throw it out and make sure you harvest earlier next year. Also, try steaming it or boiling it and if you have a blender such as a Vita-Mix you can grind it up and make a corn soup. Some people like corn mixed with their mashed potatoes. In fact, I do and if the corn is slightly tough it's ok.
And of course, if you live on a farm you already know chickens and pigs love it. Swap it to your neighbor for some delicious tomatoes. We put the whole ear with husk in the micro-wave for about 2 minutes and this may help soften the kernel. Watch out it's HOT.
